Better Than McDonald’s | Vegan Breakfast Sausage
We all could die for a Mcdonald’s egg McMuffin. But not actually die from it lol. So I have been using this vegan recipe which tastes almost exactly the same but is actually nutritious and can help benefit our life!
Not to bash McDonald’s, it has its time to be enjoyed but I am a sucker for a good breakfast sandwich. I thought if I can eat something that will fill me and nourish me in the morning AND taste like McDonald’s or better, I am winning!
Let me also mention that this vegan breakfast sausage is heart-healthy, diabetic-friendly, and celiac-friendly.
Sounds like quite the opposite to daily breakfast at McDonald’s.
Before I get to the recipe, you must know that these can be as easy and quick as driving to get fast food, or making a smoothie! You can just pull a pre-made patty from your freezer and toss it on a whole-grain English muffin or toast, add some vegetables (and an egg if your heart desires), and voila! Breakfast in 5 minutes.
I recommend making a big batch on the weekend and freezing the rest in an airtight container, separating the patties with parchment paper.
My Famous Vegan Breakfast Sausage
1 Tbsp ground chia seeds
3 Tbsp lukewarm water
1 cup cooked brown rice or mixed brown and wild rice
¾ cup rolled oats
½ Tbsp coconut oil
2 Tbsp coconut aminos (or gmo-free soya sauce)
2 tsp ground sage
½ tsp thyme or oregano
¼ tsp nutmeg
1 tsp black pepper
1 pinch Himalayan salt (or another natural salt)
Avocado oil, for cooking (or other heat-safe cooking oil)
Ahead of time, make sure you have cooked your rice. This is a great opportunity to use up any leftover rice you may have!
Mix together seeds and water, let sit aside.
In a food processor, add in oats and pulse 5 times. Add in rice and pulse 5 more times. Add in the seed and water mixture you set aside earlier, coconut oil, coconut aminos, sage, oregano/thyme, nutmeg, pepper, and salt. Pulse until mixed but do not over-process. You want the patties to still have texture.
Heat your frying pan ( I recommend a well-seasoned cast iron pan) on medium heat with avocado oil or oil with a safe smoke point.
Shape patties of your preferred size by rolling them into a ball and then flatten them with a spatula.
Place your flattened patties in your pan. You may prefer to do one at a time depending on the size of the pan. Let the side get golden brown and then flip to do the same on the other side.
Remove from the heat and serve on an English muffin with lettuce, tomato, and vegan mayo. You can also freeze the patties to have for a quick breakfast. To freeze, make sure they are cooled, separate with wax paper in an airtight container. Just unthaw and reheat on medium-low heat in your pan to enjoy after frozen!
