Vegan Strawberry Arugula Poppyseed Salad

Make it vegan or not by switching the vegan dairy products for real dairy. Simple. Summer in your mouth!

So many people have been requesting I share this recipe and honestly I feel like if i were not to, I would be doing a big disservice to the world. You’ve gotta try it, even if you are not a salad lover. This salad is the BEST salad I have ever ate! It is also packed with tons of nutrients and it has all flavour profiles of tangy, sweet, sour, and salty and is like a summer party in your mouth. It’s a perfect side to a summer meal or a lovely way to impress your friends at a summer backyard party. Anyways, you are here for the recipe so let’s get to it!!!

The Salad

  • 2 cups of sliced Strawberries

  • 1 cucumber, cubed

  • 1 -2 cups of Farro (you could also swap for rice, bulgar, or another grain)

  • 1/2 of a red onion, thinly sliced

  • 1 avocado, cubed (or more, can’t go wrong with an extra)

  • 2-3 cups of fresh arugula (or you can mix 1/2 arugula and 1/2 spinach)

  • 1 cup of vegan feta

Instructions: Bring your water to boil with salt for the Farro. Add the Farro to the water after rinsing and cook for recommended time on the package. Meanwhile, chop and slice all vegetables and fruit. Soak the sliced red onion in water for 5 minutes. Once the Farro is done cooking, strain and rinse with cold water to let it cool. Throw all the ingredients in a nice bowl.

The Dressing

  • 1/4 cup of apple cider vinegar

  • 1/2 cup of extra virgin olive oil

  • 1 1/2 tbsp of vegan mayo (or plain yogurt but then add more salt and less maple syrup at the end)

  • 3 tbsp real Canadian maple syrup (add 1 tbsp less if using yogurt)

  • 3 tsp of finely chopped or grated red onion or shallots

  • 1 tsp vegan Dijon mustard

  • pinch of salt (add more if using yogurt)

  • 1 1/2 tbsp of poppy seeds

Instructions: whisk together well with a fork. Make sure it is well mixed when adding on salad. Pour over salad. Mix everything together and enjoy!
