20 Minute Vegetarian Taco Recipe

I really love tacos… but I also enjoy a meal that is quick and easy and has as much fiber as possible. I also like to avoid eating a lot of meat. No, I am not vegan but I personally believe the majority of people over-consume animal products. This can cut down on the amount of fiber we could have consumed from the diet. And low fiber means: slow digestions, gas and greater risk of high cholesterol, fatty liver and more.

Did you also know that reducing the amount of animal products in your dietary regimen and instead using more plant based foods is not only better for your overall health, but your wallet too! Now I’m not saying to convert to a full-out vegetarian or vegan; BUT perhaps slowly adjusting to a more plant friendly week and for example choosing Friday to be animal free could do you wonders!

Below I have shared with you a recipe I quickly made up after a long day at work. My friends who I shared it with have been raving about it. They have been asking me to share it! So here it is, a recipe to perhaps kick-start your journey to a little more plant friendly menu for the week!


Ingredients

  • 1 Can of Black Beans (look for one with no added salt)

  • 1-2 Tbsp Avocado Oil

  • 1 bag of Small Whole Wheat or Whole Grain Wraps

  • 1/2 tsp Chili Powder

  • 1-2 cloves crushed fresh Crushed Garlic or 1/4 tsp Garlic Powder

  • 1/2 chopped fresh Onion or 1/4 tsp Onion Powder

  • 1/4 tsp Paprika

  • 1/4 tsp Oregano

  • 1 tsp Himalayan Salt

  • 1 tsp Black Pepper

  • 3/4 tsp Ground Cumin

  • 1 pinch of Red Pepper Flakes (optional)

Instructions

In a hot frying pan with avocado oil, saute the chopped onion and at the end add the crushed garlic. Mash up the canned black beans and add them to the frying pan. If you are using dried onion or garlic, add them when you add the following spices.

Add the spices to the frying pan and mix them into the mashed beans. Cook for 5 minutes or until beans are warm and spices are incorperated.

Place the seasoned mashed beans on the wraps as if they were taco meat.

Top with these toppings or what you please.

Topping ideas:

  • Chopped Tomatos

  • Chopped Romain Lettuce

  • Green Onion

  • Grated Cheese (look for one with real milk ingredients NOT modified milk)

  • Homemade salsa
